Dry rub Beef BrisketPulled Pork
USDA Choice Black Angus whole Brisket. Trimmed, rubbed, and slow smoked in our custom smoker the way traditional Texas BBQ should be. I use my custom dry rub to make the brisket packed full of flavor and very tender. Burnt ends are available upon request. We make our own amazing bbq sauce as well!
Made from Texas-raised pig. These pork butts are marinated and slowly cooked in our custom smoker until it is fall-off-the-bone tender. Our special dry rub is packed with flavor for that traditional Texas BBQ that melts in your mouth.
Whole dry-rubbed 2-3 lb. chickens smoked to be the most flavorful and moist chicken you've ever tasted. Chicken can be left whole, cut in half or pulled from the bone…your choice. Smoked boneless, skinless chicken breasts available upon request.
Slow-smoked whole turkey that is moist and tender. Turkey is not just for Thanksgiving anymore! Average weight of the whole turkeys we use are 16 to 18 pounds. Individual turkey breasts are also available.
Slow-smoked, slightly spicy sausage links handmade by a local butcher. Tastes great!! Jalapeno sausage also available.
Specialty Meats (available for an additional fee)
Ground sirloin with a special blend of spices and seasonings and topped with Bold's custom sauce. You've gotta try this!
Wild-caught salmon seasoned and smoked to be extremely delicious! You'll not be disappointed.
Pork ribs (St. Louis cut)
Marinated and smoked resulting in fall-off-the bone extremely flavorful meat that will make your grand pappy jealous. The most time-consuming piece of meat I smoke. I guarantee the best ribs you have ever had!!!!
A superb combination of shredded potatoes baked in an amazing rich cheese sauce and green onions.
Cut green beans cooked with bacon and onions for a full flavor.
Corn on the Cob* or Kernel corn
Sweet buttery corn on the cob or off...simply delicious.

Our full-service catering also includes set up of the buffet and drink station. We will provide buffet tables and white linens (if needed). Food will be kept hot in our chafers or kept cold in ice baths. We have a staff of at least 3 servers at the buffet (for portion control). We bus tables when deemed appropriate, fill to-go containers for the client(s) with the leftover foods, take down the buffet, and thoroughly clean the food prep area.
We are happy to set up guest tables for an additional fee. Cutting/serving cake is also an additional fee.

Bold BBQ can also take care of rental needs such as tables, linens, dinnerware, etc. Just tell us what your needs are and we will give you a pricing estimate. (100% payment required at least 10 days prior to event.)
Boxed Lunches are now available for corporate meetings, etc. Minimum order of 20 people. Please contact us if interested.
